Rhubarb Cobbler Recipe

Ingredients:

· 8 cups of chopped rhubarb

· 1/4 cup sugar

· 1/4 cup brown sugar

· 1/2 tsp cinnamon

· 1/8 tsp nutmeg

· 1/2 tsp vanilla

· 1/2 tsp ancho chili powder

· 2 tsp corn starch


The Crust:

· 1 cup flour

· 1/4 cup sugar

· 1/4 cup brown sugar

· 1 tsp baking powder

· 1/2 tsp salt

· 6 tbsp butter

· 1/4 cup hot water

· 2 tbsp sugar to top



Instructions:

Preheat oven to 425F/220C.


Place the rhubarb into large buttered skillet. Smooth until even. Bake 15 minutes.


While rhubarb is baking, mix all other ingredients in a bowl with the exception of the water and 2 tbsp sugar.


Pull the rhubarb from the oven and roughly smooth over the top of the dry mixture. This does not need to be completely covered. Drizzle the hot water over the top and then sprinkle with 2 tbsp sugar. Do not stir. Bake in the oven 25-30 minutes until the top browns.


Serve with ice cream and a mint sprig if desired.
